In our quest to break the boundaries of traditional winemaking, the we set out to "hack the grape." Instead of relying on grapes, we pioneered a new method using wildflower honey, Valencia orange, and Indonesian vanilla to replicate the complex flavors of wine. This innovative approach gave birth to Saccharo, a distinct category of honey wine that celebrates nature's raw ingredients—redefining what wine can be without a single grape.

At the heart of this preserve, the bees gather nectar from a diverse array of wildflowers, producing the honey that defines Perduret’s distinctive character. Paired with pure well water from the land, this precious honey undergoes a six-month fermentation process, transforming it into a rich and complex wine, deeply infused with the essence of its natural origin.
In an artisanal process, Perduret’s blend is reawakened with yeast, capturing the delicate aromas and flavors of the wildflowers and their pristine environment. The final pressurization and bottling preserve the wine’s sparkling vitality, maintaining its natural elegance.

Founded in 2010 by Michael Pearson, Perduret draws its inspiration from nature’s untamed beauty. Nestled east of El Cajon, California, within a 63-acre wildlife preserve, Perduret embodies the delicate balance between craftsmanship and sustainability.
After years of experimentation with natural ingredients, Michael Pearson discovered that wildflower honey—harvested from the thriving ecosystem surrounding the preserve—was the key to creating a sparkling wine unlike any other.

Enviornmental Sustainability
Pearson Brothers Winery champions environmental sustainability in our winemaking. Our Private Reserve Saccharo is crafted on a 63-acre estate in San Diego, CA, using innovative methods that preserve natural flora and fauna. We conserve water by using just 1 gallon for every gallon of Saccharo produced, compared to the traditional 430 gallons. Additionally, we incorporate honey sourced from bees that pollinate already watered flowers, allowing us to create exceptional wine while protecting the planet.
